Vegetable Wok



The first thing we have to do is peel and blanch the whole fresh chives for about 10 minutes. We drain and reserve them.

Peel the carrots and garlic, cut into thin sticks together with the green beans. We wash the peppers and dice them, chop the broccoli, cut the asparagus into small pieces, reserving the whole tips.

In a wok with a drizzle of virgin olive oil, we are going to sauté these ingredients for the moment together with the scallions that we have blanched. We sauté until they are al dente.

On the other hand, we cut the zucchini in half lengthwise and in turn into slices. We wash the cherry tomatoes and mushrooms, and cut them into quarters. We add everything to the wok and mix it with the rest of the ingredients. When everything is at its cooking point, we remove the content to a plate. In the same wok, add a little more olive oil and sauté the bacon cut into strips and the peeled and sliced garlic, leave a few minutes for them to brown well, add the Sweet and Sour Paprika from La Vera and quickly place all of it again. the vegetables, sauté well so that the paprika is incorporated with all the ingredients. Season with salt and serve with a drizzle of olive oil on top.
