Denomination of Origin Paprika de la Vera
Recognition as a Protected Designation of Origin (EC Regulation 982/2007 of the Commission), allows the making available to consumers of an authentic product, with a guarantee of origin and traditional production, with the endorsement of the certification accredited by ENAC of its certification system.
HISTORICAL AND NATURAL LANDSCAPE
The peppers to produce the Pimentón de la Vera are grown in an area that includes the regions of La Vera, Campo Arañuelo, Valle del Ambroz, Valle del Alagón and Arrago, in the north of the province of Cáceres. Abundant and crystalline waters of the Sierra de Gredos. It is a very wide territory and it becomes a great experience to explore at harvest time.
A MAGICAL MOMENT
Harvesting begins in mid-September, which is lived as a ritual linked to the land and its people. The peppers are harvested completely by hand, just as it was done hundreds of years ago. In each season 3,726 million kilos of peppers are harvested with a quality regulated and controlled by the Protected Designation of Origin.
An artisan and traditional process
The autumn rains of September-October forced to create an alternative process to drying in the sun. Thus they began to use dryers with heat from oak combustion. After drying, they were ground in hydraulic mills. This process is unique and makes Paprika de la Vera different from any other paprika in the world.
